My impression of udon, mostly from foodcourts is that the soup and the udon noodle tend to be on the salty side but this soup base, i must say one of the best if not, best udon soup base i had tried in SG. The soup itself lean towards sweet instead of salty and i really don't know what ingredients they put to make the broth sweet like you are having your homecooked corn soup. It isn't oily and the soup texture is light so it won't be a problem if you attempt to finish the whole bowl of soup. So i took a sip of the soup before i start my main meal, little did i know just one taste and i know i won't stop but i managed to stop myself with a powerful mantra in my mind so to prevent myself eating udon without no soup😂
For additional great taste, break the onsen egg yolk and give a good stir👍 It even add more fragrant to the already tasty soup and beef slices.
Talking about their beef slices, i really enjoy the soft, tender and sweet tasting of the meat. Although i am no expert in beef tasting as i do not usually eat beef but i must say they cook it to the right texture so it is very nice to chew on and easily break up the pieces in your mouth.
And the udon, it does not break off when you use your chopstick to pick up and surprisingly, also has a sweet taste. Bouncy (弹性) and smooth are the words i will describe this udon noodles and i guess this must have taken a lot of skills and patience to achieve this high level of udonness😂 Thank you Chefs of Tomoya Udon for bringing this delicious cuisine to Singapore🙏
And it is the first bowl of udon i had ever finish the entire bowl including the soup. Must try👍👍👍
